Mango Kulfi

Indian mango milk ice on a stick

Kulfi is the traditional Indian milk ice, made especially dense and creamy by long reduction of the milk - unchurned, so firmer than ice cream.

Enriched with mango purée and cardamom, mango kulfi is a summery refreshment from Indian streets and festivals.

Ingredients

  • Whole milk1 l
  • Mango purée (ripe)300 g
  • Sugar100 g
  • Cardamom4 pods
  • Pistachios2 tbsp
  • Condensed milk100 ml

Preparation

  1. Reduce the milk by half, stirring.

  2. Mix with sugar, cardamom and condensed milk, let cool.

  3. Stir in the mango purée.

  4. Fill into kulfi moulds, scatter with pistachios.

  5. Freeze several hours until firm.
