Mantou
Chinese steamed yeast buns
Mantou are soft steamed yeast buns and a staple of northern China, where wheat rather than rice rules the table.
Plain and lightly sweet, they accompany savoury dishes or are deep-fried and dipped in sweetened condensed milk.

- Wheat flour400 g
- Dry yeast5 g
- Sugar30 g
- Lukewarm water200 ml
- Vegetable oil1 tbsp

Preparation
Knead flour, yeast, sugar and water into a smooth dough.
Let it prove covered until doubled in volume.
Roll out the dough, roll up and cut into pieces.
Let prove briefly again.
Steam 12-15 minutes, rest briefly before opening.
