Chinese steamed yeast buns

Mantou are soft steamed yeast buns and a staple of northern China, where wheat rather than rice rules the table.

Plain and lightly sweet, they accompany savoury dishes or are deep-fried and dipped in sweetened condensed milk.

Ingredients

  • Wheat flour400 g
  • Dry yeast5 g
  • Sugar30 g
  • Lukewarm water200 ml
  • Vegetable oil1 tbsp

Preparation

  1. Knead flour, yeast, sugar and water into a smooth dough.

  2. Let it prove covered until doubled in volume.

  3. Roll out the dough, roll up and cut into pieces.

  4. Let prove briefly again.

  5. Steam 12-15 minutes, rest briefly before opening.
