Martabak Telur

Savoury stuffed egg pancake from Indonesia

Martabak telur is a savoury stuffed pancake that shows the Indian influence in Indonesian street food. “Telur” means egg.

A paper-thin stretched dough is filled with a mix of egg, spiced minced meat and leek, folded and fried crisp – a popular evening snack.

Ingredients

  • Wheat flour (for thin dough)250 g
  • Eggs4
  • Beef or chicken mince200 g
  • Leek & spring onion1 bunch
  • Curry powder & pepper1 tsp each
  • Onion & garlicsome of each
  • Oilfor frying

Preparation

  1. Knead the dough, oil and rest it, then stretch paper-thin.

  2. Fry the mince with onion, garlic and curry powder, cool.

  3. Beat the eggs with leek and the mince.

  4. Place the filling on the dough and fold into a parcel.

  5. Fry crisp on both sides in plenty of oil, cut into pieces.
