Medu Vada
South Indian lentil doughnuts
Medu vada are crisp, savoury “doughnuts” made from skinned urad lentils, a classic South Indian breakfast.
Crisp outside and fluffy within, they are served with coconut chutney and sambar - often alongside idli or dosa.

- Skinned urad dal250 g
- Green chilli & gingersome of each
- Curry leaves1 sprig
- Black pepper1 tsp
- Vegetable oil (for frying)plenty
- Coconut chutney & sambarto serve

Preparation
Soak the urad dal overnight and grind into a fluffy batter.
Mix in chilli, ginger, curry leaves and pepper.
With wet hands form rings with a hole.
Deep-fry golden and crisp in hot oil.
Serve with coconut chutney and sambar.
