Medu Vada

South Indian lentil doughnuts

Medu vada are crisp, savoury “doughnuts” made from skinned urad lentils, a classic South Indian breakfast.

Crisp outside and fluffy within, they are served with coconut chutney and sambar - often alongside idli or dosa.

Ingredients

  • Skinned urad dal250 g
  • Green chilli & gingersome of each
  • Curry leaves1 sprig
  • Black pepper1 tsp
  • Vegetable oil (for frying)plenty
  • Coconut chutney & sambarto serve

Preparation

  1. Soak the urad dal overnight and grind into a fluffy batter.

  2. Mix in chilli, ginger, curry leaves and pepper.

  3. With wet hands form rings with a hole.

  4. Deep-fry golden and crisp in hot oil.

  5. Serve with coconut chutney and sambar.
