Mee Goreng

Spicy fried yellow noodles from Malaysia

Mee goreng are fried egg noodles and a hallmark of Malaysia's mamak stalls. They show the Indian-Muslim influence in Malaysian cooking.

The noodles are fried with chilli, sweet soy sauce and tomato and served with tofu, egg and lime – savoury, sweet and gently spicy.

Ingredients

  • Yellow egg noodles300 g
  • Chicken, sliced150 g
  • Firm tofu100 g
  • Sweet soy sauce (kecap manis)2 tbsp
  • Chilli paste (sambal)1 tbsp
  • Tomato & pak choi1 handful each
  • Eggs & lime2 / 1

Preparation

  1. Fry the tofu and chicken in a hot wok.

  2. Add sambal and tomato, fry briefly.

  3. Fold in the noodles and pak choi.

  4. Season with kecap manis and toss through.

  5. Fry the egg at the side, fold in, serve with lime.
