Mee Rebus
Malaysian noodles in spiced sweet-potato sauce
Mee rebus – “boiled noodles” – is a Malaysian-Singaporean dish of Malay cuisine. Its hallmark is the thick, sweet-savoury sauce.
The sauce is thickened with sweet potato and seasoned with shrimp paste; served over yellow noodles, garnished with egg, tofu, lime and green chilli.

Ingredients
- Yellow egg noodles400 g
- Sweet potatoes400 g
- Shallots, garlic, chillias paste
- Shrimp paste (belacan)1 tbsp
- Curry powder & tamarind1 tbsp each
- Eggs (boiled) & tofuto top
- Lime, spring onion, green chillito garnish

Preparation
Boil the sweet potatoes soft and purée finely.
Fry the spice paste with belacan and curry powder.
Stir sweet-potato purée and water into a thick sauce.
Season with tamarind and simmer.
Place noodles in bowls, sauce over, garnish with egg and tofu.
