Mentaiko Pasta

Japanese spaghetti with spicy fish roe

Mentaiko pasta belongs to wafū pasta - Japanese-interpreted spaghetti dishes - and uses spicy marinated pollack roe (mentaiko).

The raw roe is stirred with butter into a creamy sauce; a strip of nori and shiso give the final fresh accent.

Ingredients

  • Spaghetti200 g
  • Mentaiko (spicy pollack roe)2 sacs
  • Butter30 g
  • Soy sauce1 tsp
  • Nori (in strips)1 sheet
  • Shiso or spring onionsome

Preparation

  1. Cook the spaghetti al dente, keep some pasta water.

  2. Scrape the mentaiko from its sac, mix with soft butter and soy sauce.

  3. Toss hot spaghetti with the mentaiko butter.

  4. If needed, loosen creamy with pasta water.

  5. Serve with nori strips and shiso.
