Central Vietnamese turmeric rice noodles

Mì Quảng comes from Quảng Nam province in central Vietnam and is a speciality of the city of Đà Nẵng. It is a noodle bowl with only a little broth.

Wide rice noodles dyed yellow with turmeric are layered with prawns and pork, peanuts, herbs and toasted rice crackers.

Ingredients

  • Wide rice noodles (yellow)400 g
  • Prawns & pork200 g each
  • Turmeric1 tsp
  • Shallots & garlicsome of each
  • Roasted peanuts3 tbsp
  • Fresh herbs & lettuce1 bunch
  • Rice crackers (bánh tráng)2

Preparation

  1. Fry shallots, garlic and turmeric.

  2. Add the pork and prawns and sear.

  3. Pour in a little broth and simmer briefly.

  4. Place rice noodles in bowls, meat and broth on top.

  5. Garnish with peanuts, herbs and rice crackers.
