Spicy sprouted-bean curry from Maharashtra

Misal pav is a fiery breakfast from Maharashtra: a curry of sprouted moth beans crowned with crunchy farsan and served with soft pav bread.

The spicy sauce (tarri) of onions, coconut and chilli makes it one of India's most intense street foods.

Ingredients

  • Sprouted moth beans (or mung)300 g
  • Onions2
  • Grated coconut3 tbsp
  • Goda or garam masala & chillisome of each
  • Farsan (crunchy snack mix)1 handful
  • Soft rolls (pav)8
  • Onion, coriander, limeto serve

Preparation

  1. Boil the sprouted beans until tender.

  2. Roast onions and coconut, grind with masala and chilli into tarri and reduce.

  3. Let the beans steep in the spicy sauce.

  4. Scatter with farsan, raw onion and coriander.

  5. Serve hot with pav and lime.
