Moo Ping

Thai grilled pork skewers

Moo ping are marinated pork skewers grilled over coals every morning across Thailand and sold with sticky rice. They belong to the street breakfast.

A marinade of coconut milk, garlic and coriander root keeps the meat tender and sweet – grilled on skewers over charcoal it gains its signature aroma.

Ingredients

  • Pork neck, thinly sliced600 g
  • Coconut milk100 ml
  • Garlic & coriander rootsome of each
  • Oyster sauce & soy sauce2 tbsp each
  • Palm sugar2 tbsp
  • White pepper1 tsp
  • Sticky riceto serve

Preparation

  1. Pound garlic, coriander root and pepper into a paste.

  2. Mix with coconut milk, oyster sauce, soy and palm sugar.

  3. Marinate the meat for at least 3 hours.

  4. Thread onto skewers and grill over charcoal.

  5. Baste with coconut milk, serve with sticky rice.
