Yuebing for the Chinese Mid-Autumn Festival

Mooncakes (yuebing) are inseparable from the Mid-Autumn Festival, which celebrates family reunion in autumn. Their round shape stands for completeness and unity.

A thin, golden-baked syrup-dough shell encloses a dense lotus-seed paste filling; ornate patterns are pressed in with a wooden mould.

Ingredients

  • Golden syrup150 g
  • Wheat flour220 g
  • Lotus paste (or red bean paste)400 g
  • Lye water1 tsp
  • Vegetable oil50 ml
  • Egg yolk (for brushing)1
  • Salted egg yolks (optional)8

Preparation

  1. Mix syrup, oil and lye water, knead in flour, let rest.

  2. Shape lotus paste into balls, enclosing salted yolk if using.

  3. Portion the dough, flatten and wrap the filling.

  4. Press into a mooncake mould and form the pattern.

  5. Brush with egg yolk and bake golden, mature for a few days.
