Nan Gyi Thoke

Burmese thick rice-noodle salad with chicken

Nan gyi thoke is a Burmese noodle salad of thick, round rice noodles tossed with a chicken curry and chickpea flour.

Unlike a soup it is dressed “dry” - made creamy by the toasted flour, savoury and served with crisp onions and lime.

Ingredients

  • Thick round rice noodles400 g
  • Chicken thighs400 g
  • Toasted chickpea flour3 tbsp
  • Onions & garlicsome of each
  • Turmeric, paprika, chillispices
  • Fish sauce2 tbsp
  • Fried onions, coriander, limeto serve

Preparation

  1. Fry onions and garlic with turmeric, paprika and chilli.

  2. Add the chicken and braise into a thick curry.

  3. Cook the rice noodles and drain.

  4. Toss the noodles with curry and chickpea flour until creamy.

  5. Serve with fried onions, coriander and lime.
