Nasi Dagang

Coconut rice with fish curry from Terengganu

Nasi dagang is a breakfast classic from north-eastern Malaysia: a special rice steamed in coconut milk with fenugreek.

It is served with a rich tuna curry (gulai ikan tongkol) and pickled vegetables - savoury and aromatic.

Ingredients

  • Nasi dagang rice (or a blend)400 g
  • Coconut milk400 ml
  • Fenugreek seeds & shallotssome of each
  • Tuna500 g
  • Curry paste & tamarindsome of each
  • Ginger & lemongrasssome of each
  • Pickled vegetables (acar)to serve

Preparation

  1. Soak the rice and steam with coconut milk, fenugreek and shallots.

  2. Fry the curry paste with lemongrass and ginger.

  3. Add the tuna, braise with coconut milk and tamarind.

  4. Season the fish curry until thick and aromatic.

  5. Serve the coconut rice with the curry and acar.
