Nasi Kuning

Indonesian yellow festive rice in coconut

Nasi kuning - “yellow rice” - is cooked in coconut milk with turmeric and is a festive dish for thanksgiving celebrations and special occasions.

The bright yellow colour symbolises prosperity; the rice is often piled into a cone (tumpeng) and served with many side dishes.

Ingredients

  • Rice400 g
  • Coconut milk400 ml
  • Turmeric1 tbsp
  • Lemongrass & bay leavessome of each
  • Kaffir lime leaves3
  • Salt1 tsp

Preparation

  1. Wash the rice.

  2. Warm coconut milk with turmeric, lemongrass and lime leaves.

  3. Cook the rice covered in the spiced coconut milk.

  4. Fluff before serving and remove the aromatics.

  5. Shape into a cone and serve with side dishes.
