Nem nướng are grilled pork sausages or meatballs and a speciality from the Nha Trang region of central Vietnam. They smell irresistible over the charcoal.
Finely seasoned, slightly sweet pork is formed onto skewers and grilled; it is eaten in rice paper with herbs, lettuce and a dip.

Minced pork (not lean)★500 g
Garlic & shallots★some of each
Fish sauce & sugar★1 tbsp each
Baking soda1/2 tsp
Rice paper★for wrapping
Lettuce & fresh herbs1 bunch
Dip (nuoc cham or peanut sauce)★to serve

Preparation

Fry the garlic and shallots and let cool.

Knead pork with fish sauce, sugar, baking soda and aromatics.

Chill the mixture, then form into sausages on skewers.

Grill over charcoal until golden all round.

Wrap in rice paper with lettuce and herbs, dip in the sauce.
