Nem Nướng

Grilled Vietnamese pork meatballs

Nem nướng are grilled pork sausages or meatballs and a speciality from the Nha Trang region of central Vietnam. They smell irresistible over the charcoal.

Finely seasoned, slightly sweet pork is formed onto skewers and grilled; it is eaten in rice paper with herbs, lettuce and a dip.

Ingredients

  • Minced pork (not lean)500 g
  • Garlic & shallotssome of each
  • Fish sauce & sugar1 tbsp each
  • Baking soda1/2 tsp
  • Rice paperfor wrapping
  • Lettuce & fresh herbs1 bunch
  • Dip (nuoc cham or peanut sauce)to serve

Preparation

  1. Fry the garlic and shallots and let cool.

  2. Knead pork with fish sauce, sugar, baking soda and aromatics.

  3. Chill the mixture, then form into sausages on skewers.

  4. Grill over charcoal until golden all round.

  5. Wrap in rice paper with lettuce and herbs, dip in the sauce.
