Nom Banh Chok

Khmer rice noodles with green fish curry

Nom banh chok, often simply called “Khmer noodles”, is a traditional Cambodian breakfast: fermented rice noodles under a pale-green fish gravy.

The gravy of lemongrass, turmeric, galangal and kroeung is bound with fish; topped with raw banana blossom, cucumber and herbs.

Ingredients

  • Fresh rice noodles400 g
  • White fish fillet400 g
  • Kroeung (lemongrass-turmeric paste)3 tbsp
  • Coconut milk300 ml
  • Fish sauce & prahoksome of each
  • Banana blossom, cucumber, herbs1 handful
  • Fresh herbs & bean sproutsto serve

Preparation

  1. Cook the fish, lift from the stock and shred finely.

  2. Fry the kroeung, pour in coconut milk and fish stock.

  3. Add the fish, season with fish sauce and a little prahok.

  4. Arrange the rice noodles in bowls.

  5. Spoon over the gravy, serve with banana blossom and herbs.
