Ochazuke

Japanese rice doused with green tea

Ochazuke is a simple, comforting dish: warm rice doused with green tea or dashi and finished with small toppings.

Loved since the Edo era, it is the classic late-night bite and an elegant way to turn leftover rice into something refined.

Ingredients

  • Cooked rice2 bowls
  • Green tea (sencha) or dashi400 ml
  • Grilled salmon or umeboshito taste
  • Nori (in strips)1 sheet
  • Wasabisome
  • Sesame & spring onionto garnish

Preparation

  1. Put the rice into bowls.

  2. Lay salmon or umeboshi on the rice.

  3. Brew the green tea fresh.

  4. Pour the hot tea over the rice.

  5. Garnish with nori, sesame, wasabi and spring onion.
