Ojingeo Bokkeum

Korean-style spicy stir-fried squid

Ojingeo bokkeum is a spicy stir-fried squid dish and a beloved companion to rice and soju in Korean diners and homes.

The squid is fried fast and hot with vegetables in a bright red gochujang-gochugaru sauce so it stays tender and the sauce glistens.

Ingredients

  • Squid, in rings500 g
  • Gochujang & gochugaru1 tbsp each
  • Soy sauce & sugar1 tbsp each
  • Onion & carrot1 each
  • Garlic & gingersome of each
  • Sesame oil & sesame1 tbsp each
  • Spring onion2

Preparation

  1. Mix gochujang, gochugaru, soy sauce, sugar, garlic and ginger.

  2. Fry onion and carrot in a hot wok.

  3. Add the squid and sear briefly.

  4. Add the spice paste and toss fast.

  5. Finish with sesame oil, sesame and spring onion.
