Japanese omelette over ketchup rice

Omurice is a classic of Japanese yōshoku cooking, which absorbed Western influences. It appeared in early-20th-century Tokyo restaurants.

Fried rice with chicken and ketchup is wrapped in a soft omelette and finished with tomato sauce – a nostalgic comfort dish.

Ingredients

  • Cooked rice400 g
  • Chicken, diced150 g
  • Eggs4
  • Ketchup3 tbsp
  • Onion1
  • Butter2 tbsp
  • Peas1 handful

Preparation

  1. Fry the onion and chicken in butter.

  2. Add rice and peas, season with ketchup.

  3. Keep the rice warm and shape into portions.

  4. Beat the eggs and cook into a soft omelette.

  5. Lay the omelette over the rice, decorate with ketchup.
