Oyster Omelette
O-a-tsian – Taiwan's night-market classic
The oyster omelette (o-a-tsian) is a hallmark of Taiwan's night markets and comes from the cooking of the Hokkien Chinese of south-eastern China.
Small oysters are fried with a batter of sweet-potato starch and egg that turns wonderfully stretchy, and topped with a sweet-savoury sauce.

- Fresh small oysters150 g
- Sweet-potato starch4 tbsp
- Eggs3
- Leafy greens (e.g. tatsoi)1 handful
- Ketchup & chilli sauce1 tbsp each
- Miso paste & sugar1 tsp each

Preparation
Mix sweet-potato starch with water into a thin batter.
Fry the oysters briefly in the pan.
Pour the batter over and let it just set.
Add egg and greens and fry together.
Top with a sauce of ketchup, chilli, miso and sugar.
