Oyster Omelette

O-a-tsian – Taiwan's night-market classic

The oyster omelette (o-a-tsian) is a hallmark of Taiwan's night markets and comes from the cooking of the Hokkien Chinese of south-eastern China.

Small oysters are fried with a batter of sweet-potato starch and egg that turns wonderfully stretchy, and topped with a sweet-savoury sauce.

Ingredients

  • Fresh small oysters150 g
  • Sweet-potato starch4 tbsp
  • Eggs3
  • Leafy greens (e.g. tatsoi)1 handful
  • Ketchup & chilli sauce1 tbsp each
  • Miso paste & sugar1 tsp each
  • Wateras needed

Preparation

  1. Mix sweet-potato starch with water into a thin batter.

  2. Fry the oysters briefly in the pan.

  3. Pour the batter over and let it just set.

  4. Add egg and greens and fry together.

  5. Top with a sauce of ketchup, chilli, miso and sugar.
