Pad Prik King

Thai dry chilli curry

Pad prik king is a “dry” curry: unlike soupy curries, the curry paste is fried in the wok without coconut milk until it caramelises aromatically.

With pork and crisp long beans it is bold, salty and spicy - a quick stir-fry of everyday Thai cooking.

Ingredients

  • Pork, sliced400 g
  • Red curry paste2 tbsp
  • Long beans (or green beans)200 g
  • Kaffir lime leaves4
  • Fish sauce & palm sugar1 tbsp each
  • Vegetable oil2 tbsp
  • Chillito taste

Preparation

  1. Fry the curry paste in hot oil until fragrant.

  2. Add the pork and stir-fry vigorously.

  3. Add the beans and shredded lime leaves.

  4. Season with fish sauce and palm sugar.

  5. Reduce dry until glossy; serve with rice.
