Pad See Ew

Wide rice noodles in dark soy sauce

Pad see ew – “fried in soy sauce” – is a Thai street-food favourite with Chinese roots. Wide rice noodles are fried with dark soy sauce and Chinese broccoli in the wok.

Unlike the spicy pad thai, it is mild, lightly sweet and smoky – when the wok is hot enough.

Ingredients

  • Wide rice noodles300 g
  • Chicken breast, sliced200 g
  • Chinese broccoli (gai lan)1 handful
  • Dark soy sauce2 tbsp
  • Oyster sauce1 tbsp
  • Egg2

Preparation

  1. Sear the chicken in a very hot wok.

  2. Push aside, scramble in the egg and let it set.

  3. Briefly fry the gai lan.

  4. Add the noodles, season with dark soy and oyster sauce.

  5. Toss until charred aromas develop. Serve hot.
