Pad Woon Sen

Thai stir-fried glass noodles

Pad woon sen are stir-fried glass noodles and a light classic of everyday Thai cooking. The mung-bean-starch noodles turn glossy and silky.

Fried in the wok with egg, prawns and plenty of vegetables, the noodles soak up the savoury sauce perfectly – quick, colourful and filling.

Ingredients

  • Glass noodles (mung bean)150 g
  • Prawns200 g
  • Egg2
  • Soy sauce & oyster sauce1 tbsp each
  • Fish sauce & sugar1 tsp each
  • Carrot, cabbage, spring onion1 handful
  • Garlic2 cloves

Preparation

  1. Soak the glass noodles in warm water and drain.

  2. Fry garlic and prawns in the wok.

  3. Add the egg and let it set.

  4. Add vegetables and noodles, season with the sauces.

  5. Toss until the noodles turn glossy.
