Crisp Indian vegetable fritters from chickpea flour

Pakora are fried morsels of vegetable in chickpea batter and a beloved snack across South Asia, especially in the monsoon season and with tea.

The besan (chickpea flour) batter is flavoured with spices; onion, potato or spinach are fried in it – crisp and savoury.

Ingredients

  • Chickpea flour (besan)200 g
  • Onion, in rings2
  • Potato or spinach150 g
  • Cumin & turmeric1 tsp each
  • Chilli powder & saltto taste
  • Wateras needed
  • Frying oilas needed

Preparation

  1. Stir chickpea flour with spices and water into a thick batter.

  2. Fold the vegetables into the batter until coated.

  3. Heat the oil to 175 °C.

  4. Drop small portions into the oil and fry golden brown.

  5. Drain on kitchen paper, serve with chutney.
