Korean shaved-ice dessert

Patbingsu is Korea's favourite summer dessert: finely shaved ice crowned with sweet red bean paste (pat), fruit and condensed milk.

What once began simply with ice and beans is now heaped with mochi, fruit and syrup into a lavish, cooling treat.

Ingredients

  • Ice cubes (finely shaved)500 g
  • Sweet red bean paste (pat)150 g
  • Sweetened condensed milk4 tbsp
  • Mochi pieces1 handful
  • Fresh fruitto taste
  • Toasted soybean flour (optional)some

Preparation

  1. Finely shave or crush the ice.

  2. Heap the shaved ice in a bowl.

  3. Top with red bean paste and mochi.

  4. Garnish with fruit.

  5. Drizzle with condensed milk and serve at once.
