Pav Bhaji

Mumbai's spicy mashed vegetables with buttered rolls

Pav bhaji arose in 19th-century Mumbai as a quick meal for textile workers and became one of India's most famous street foods.

A spiced mash of crushed vegetables is fried with plenty of butter and served with soft, butter-toasted rolls (pav).

Ingredients

  • Potatoes400 g
  • Mixed veg (peas, cauliflower, carrot)400 g
  • Onions & tomatoes2 each
  • Pav bhaji masala2 tbsp
  • Butter60 g
  • Ginger-garlic paste1 tbsp
  • Soft rolls (pav)8

Preparation

  1. Boil the potatoes and vegetables until soft and mash.

  2. Fry the onions in butter until soft, add ginger-garlic.

  3. Reduce in the tomatoes and pav bhaji masala.

  4. Add the mashed vegetables, stir with butter into a mash.

  5. Toast the rolls in butter and serve alongside.
