Pav Bhaji
Mumbai's spicy mashed vegetables with buttered rolls
Pav bhaji arose in 19th-century Mumbai as a quick meal for textile workers and became one of India's most famous street foods.
A spiced mash of crushed vegetables is fried with plenty of butter and served with soft, butter-toasted rolls (pav).

Ingredients
- Potatoes400 g
- Mixed veg (peas, cauliflower, carrot)400 g
- Onions & tomatoes2 each
- Pav bhaji masala2 tbsp
- Butter60 g
- Ginger-garlic paste1 tbsp
- Soft rolls (pav)8

Preparation
Boil the potatoes and vegetables until soft and mash.
Fry the onions in butter until soft, add ginger-garlic.
Reduce in the tomatoes and pav bhaji masala.
Add the mashed vegetables, stir with butter into a mash.
Toast the rolls in butter and serve alongside.
