Vietnamese chicken soup with rice noodles

Phở gà is the chicken version of the famous Vietnamese phở, born when beef was briefly scarce in the 1930s. Today it is a classic in its own right.

A clear chicken broth scented with ginger and star anise is poured over rice noodles and tender chicken, garnished fresh with herbs and lime.

Ingredients

  • Boiling fowl1.2 kg
  • Rice noodles (phở)400 g
  • Ginger & shallots (charred)some of each
  • Star anise, coriander seed, clovesspices
  • Fish sauce2 tbsp
  • Spring onion & coriander1 bunch
  • Lime & Thai basilto serve

Preparation

  1. Char the ginger and shallots over an open flame.

  2. Simmer the chicken with spices and aromatics clear for 70 minutes.

  3. Lift out the chicken, shred it, season broth with fish sauce.

  4. Cook the rice noodles and divide into bowls.

  5. Add chicken, pour over broth, serve with herbs and lime.
