Pinakbet

Filipino vegetable stew with shrimp paste

Pinakbet is a traditional vegetable stew of the Ilocano in the northern Philippines, seasoned with fermented fish or shrimp paste (bagoong).

Squash, bitter melon, eggplant and okra are cooked gently so each vegetable keeps its shape - rustic and umami-rich.

Ingredients

  • Squash & eggplant200 g each
  • Bitter melon & okra100 g each
  • Long beans100 g
  • Shrimp paste (bagoong)2 tbsp
  • Tomato, onion, garlic, gingersome of each
  • Water100 ml

Preparation

  1. Fry garlic, onion, ginger and tomato.

  2. Stir in the shrimp paste and roast briefly.

  3. Pour in a little water.

  4. Layer firm vegetables first, soft later and do not stir.

  5. Steam covered until the vegetables are done; turn carefully.
