Pineapple Cake

Taiwan's buttery pastry with pineapple filling

The pineapple cake (fonglisu) is Taiwan's most famous edible souvenir: a crumbly butter-pastry cube with a sweet-tart pineapple filling.

In Taiwanese, “pineapple” sounds like “good fortune comes” - so the pastry is seen as a lucky charm and a popular festive gift.

Ingredients

  • Butter120 g
  • Flour & cornstarch200 g + 30 g
  • Icing sugar40 g
  • Egg1
  • Fresh pineapple600 g
  • Sugar (for the filling)60 g

Preparation

  1. Finely grate the pineapple and reduce with sugar to a thick jam.

  2. Knead butter, icing sugar, egg and flour into a short pastry.

  3. Portion the dough, enclosing a ball of pineapple filling in each.

  4. Press into rectangular moulds.

  5. Bake at 170 °C until golden, let cool.
