Crispy Thai fish with chilli-tamarind sauce
Pla rad prik is a whole, crisp-fried fish doused with a sweet-sour-spicy chilli-tamarind sauce.
The contrast of crisp skin and intense sauce makes the dish a feast on any Thai table.

- Dried & fresh chillito taste
- Tamarind paste3 tbsp
- Palm sugar & fish sauce2 tbsp each
- Garlic & shallotssome of each
- Flour (for frying)some
- Vegetable oilfor frying

Preparation
Score the fish, dust lightly with flour and fry crisp.
Fry garlic, shallots and chilli.
Reduce with tamarind, palm sugar and fish sauce into a sauce.
Arrange the fish on a plate.
Douse with the hot chilli-tamarind sauce, serve.
