Crispy Thai fish with chilli-tamarind sauce

Pla rad prik is a whole, crisp-fried fish doused with a sweet-sour-spicy chilli-tamarind sauce.

The contrast of crisp skin and intense sauce makes the dish a feast on any Thai table.

Ingredients

  • Whole fish (e.g. sea bass)1 (600 g)
  • Dried & fresh chillito taste
  • Tamarind paste3 tbsp
  • Palm sugar & fish sauce2 tbsp each
  • Garlic & shallotssome of each
  • Flour (for frying)some
  • Vegetable oilfor frying

Preparation

  1. Score the fish, dust lightly with flour and fry crisp.

  2. Fry garlic, shallots and chilli.

  3. Reduce with tamarind, palm sugar and fish sauce into a sauce.

  4. Arrange the fish on a plate.

  5. Douse with the hot chilli-tamarind sauce, serve.
