Indian breakfast of flattened rice

Poha is made from flattened, dried rice, briefly soaked and then fried with a tadka of mustard seeds, turmeric and onions.

A beloved light breakfast especially in Maharashtra and Madhya Pradesh; finished with peanuts, lime and coriander.

Ingredients

  • Poha (flattened rice)200 g
  • Onion1
  • Mustard seeds & turmeric1 tsp each
  • Green chilli & curry leavessome of each
  • Peanuts2 tbsp
  • Lime & corianderto serve

Preparation

  1. Rinse the poha briefly in a sieve until soft but not mushy.

  2. Bloom mustard seeds, curry leaves and chilli in oil, roast peanuts.

  3. Add the onion and fry soft, stir in turmeric.

  4. Fold in the poha and warm gently.

  5. Serve with lime juice and coriander.
