Pol Roti

Sri Lankan coconut flatbread

Pol roti is a simple, filling flatbread from Sri Lanka, its dough laced with plenty of freshly grated coconut.

It is served for breakfast or dinner, often with lunu miris (onion-chilli sambol) or a curry - rustic and hearty.

Ingredients

  • Flour300 g
  • Freshly grated coconut150 g
  • Onion (finely chopped)1
  • Green chilli1-2
  • Salt & wateras needed
  • Lunu miris (sambol)to serve

Preparation

  1. Mix flour, coconut, onion, chilli and salt.

  2. Knead with water into a firm, shapeable dough.

  3. Portion the dough and press into flatbreads.

  4. Bake in a dry pan golden on both sides.

  5. Serve hot with lunu miris.
