Malay fruit-and-vegetable salad

Rojak - the word means “mixed medley” - is a Malay-Singaporean salad of crisp fruit and vegetables in a dark, sweet-savoury sauce.

The dressing of fermented shrimp paste (belacan), tamarind, palm sugar and chilli is savoury, sweet and spicy at once; toasted peanuts add crunch.

Ingredients

  • Pineapple, cucumber, green applesome of each
  • Jicama or radish100 g
  • Shrimp paste (belacan)1 tbsp
  • Tamarind & palm sugar2 tbsp each
  • Chilli paste1 tbsp
  • Toasted peanuts3 tbsp
  • Fried tofu (tau pok)optional

Preparation

  1. Cut the fruit and vegetables into bite-sized pieces.

  2. Toast the belacan briefly, mix with tamarind, palm sugar and chilli.

  3. Stir the dressing smooth until thick.

  4. Toss fruit, vegetables and tofu with the dressing.

  5. Serve scattered with chopped peanuts.
