Malay egg-and-mince sandwich

Roti john is a Malay-Singaporean street food: a long bread soaked with an egg-and-mince mixture and fried on the griddle.

The name dates to colonial times, when the dish was offered to Western guests (“John”) as a cheap take on the hamburger.

  • Long rolls2
  • Eggs3
  • Minced meat (beef or chicken)200 g
  • Onion1
  • Curry powder1 tsp
  • Vegetable oil2 tbsp
  • Chilli sauce & mayonnaiseto serve

Preparation

  1. Whisk eggs with the mince, onion and curry powder.

  2. Cut the rolls lengthwise.

  3. Press the cut face into the egg mixture.

  4. Fry egg-side down in the pan until crisp.

  5. Drizzle with chilli sauce and mayonnaise, serve.
