Rou jia mo is considered one of the world's oldest “sandwiches”: spiced braised pork in a crisp flatbread (mo), a speciality of Xi'an in Shaanxi province.
The meat steeps for hours in a broth of over twenty spices; finely chopped, it is tucked into the freshly baked, warm bread.

Pork belly★600 g
Star anise, cinnamon, clove, fennel★spices
Soy sauce (light & dark)★2 tbsp each
Ginger & garlicsome of each
Flour (for the mo flatbreads)★300 g

Preparation

Braise the pork belly with spices and soy sauce 1.5 hours until tender.

Knead a firm dough from flour and water, let rest.

Shape flatbreads and pan-bake crisp on both sides.

Finely chop the braised meat, mix with coriander and chilli.

Slice the breads open and fill generously with meat.
