Rou Jia Mo

China's “hamburger” from Xi'an

Rou jia mo is considered one of the world's oldest “sandwiches”: spiced braised pork in a crisp flatbread (mo), a speciality of Xi'an in Shaanxi province.

The meat steeps for hours in a broth of over twenty spices; finely chopped, it is tucked into the freshly baked, warm bread.

Ingredients

  • Pork belly600 g
  • Star anise, cinnamon, clove, fennelspices
  • Soy sauce (light & dark)2 tbsp each
  • Ginger & garlicsome of each
  • Flour (for the mo flatbreads)300 g
  • Fresh coriander & chillisome

Preparation

  1. Braise the pork belly with spices and soy sauce 1.5 hours until tender.

  2. Knead a firm dough from flour and water, let rest.

  3. Shape flatbreads and pan-bake crisp on both sides.

  4. Finely chop the braised meat, mix with coriander and chilli.

  5. Slice the breads open and fill generously with meat.
