Sarson Ka Saag

Punjabi mustard-greens dish with corn bread

Sarson ka saag is a wintry farmers' dish from Punjab, inseparable from makki di roti, the golden corn flatbread.

Mustard greens and spinach are simmered long and refined with ginger, garlic and spices; a knob of butter crowns the hearty, savoury dish.

Ingredients

  • Mustard greens (sarson)500 g
  • Spinach250 g
  • Corn flour2 tbsp
  • Ginger-garlic paste2 tbsp
  • Green chilli & onion1 each
  • Cumin & garam masala1 tsp each
  • Butter or ghee2 tbsp

Preparation

  1. Boil the mustard greens and spinach soft.

  2. Coarsely blend with a little corn flour.

  3. Toast cumin in ghee, fry the onion golden brown.

  4. Add ginger-garlic, chilli and spices.

  5. Stir in the purée, simmer, serve with a knob of butter.
