Sai Ua

Spicy herb sausage from Northern Thailand

Sai ua is the famous grilling sausage of Chiang Mai and Northern Thailand, densely packed with curry paste, lemongrass and kaffir lime leaves.

Grilled over charcoal it smells intensely of herbs; sliced, it is served with sticky rice and a chilli dip.

Ingredients

  • Minced pork (with some fat)600 g
  • Red curry paste3 tbsp
  • Lemongrass (finely chopped)2 stalks
  • Kaffir lime leaves6
  • Coriander & spring onion1 handful
  • Fish sauce1 tbsp
  • Sausage casing (or as patties)as needed

Preparation

  1. Finely chop curry paste, lemongrass and lime leaves.

  2. Knead well with minced pork, herbs and fish sauce.

  3. Fill into sausage casing or form into patties.

  4. Cook slowly over charcoal or in the oven.

  5. Slice, serve with sticky rice and a chilli dip.
