Korean table-grilled pork belly

Samgyeopsal – “three-layered meat” – is Korea's most loved barbecue: thick slices of pork belly grilled on a plate right at the table.

The meat is grilled unmarinated, wrapped in lettuce leaves and folded with ssamjang, garlic and kimchi into little parcels – convivial and easy.

Ingredients

  • Pork belly, in thick slices600 g
  • Lettuce & perilla leaves1 head
  • Ssamjang (dip)4 tbsp
  • Garlic, sliced1 bulb
  • Kimchi200 g
  • Sesame oil with saltfor dipping
  • Spring onion salad1 handful

Preparation

  1. Grill the pork belly unmarinated on the hot plate.

  2. Grill garlic and kimchi at the edge.

  3. Cut the meat into bite-sized pieces.

  4. Top a lettuce leaf with meat, ssamjang and garlic.

  5. Fold into a parcel and eat in one bite.
