Sate Lilit

Balinese fish satay wrapped around lemongrass

Sate lilit is a Balinese speciality that differs from other satay: instead of skewering pieces, seasoned minced meat is wrapped around sticks.

Minced fish or chicken is blended with the Balinese spice paste bumbu and coconut, wrapped around lemongrass and grilled over charcoal.

Ingredients

  • Fish fillet, finely chopped500 g
  • Grated coconut100 g
  • Shallots, garlic, chillias paste
  • Galangal, turmeric, gingersome of each
  • Kaffir lime leaves4
  • Lemongrass sticks12
  • Coconut oil & saltto taste

Preparation

  1. Grind shallots, garlic, chilli and spices into bumbu paste.

  2. Fry the paste, blend with fish and coconut.

  3. Press the mixture firmly around the lemongrass sticks.

  4. Grill over charcoal all round until browned.

  5. Brush with a little coconut oil and serve hot.
