Indonesian sour vegetable soup with tamarind

Sayur asem - “sour vegetables” - is a refreshing Indonesian vegetable soup whose pleasant sourness comes from tamarind.

Peanuts, corn cob, long beans, melinjo and chayote float in a lightly spiced broth - a light companion to rice and fried dishes.

Ingredients

  • Tamarind paste3 tbsp
  • Peanuts (raw)100 g
  • Corn cob & long beanssome of each
  • Chayote or squash200 g
  • Shallots, garlic, candlenutsspice paste
  • Galangal & baysome
  • Palm sugar & saltsome of each

Preparation

  1. Bring the spice paste with galangal and bay to a boil in water.

  2. Pre-cook the peanuts and corn cob in it.

  3. Season with tamarind, palm sugar and salt.

  4. Add the beans and chayote and cook.

  5. Check the sour balance, serve with rice.
