Cong you ban mian – Shanghai dry noodles

Cong you ban mian is among the simplest and most loved noodle dishes of Shanghai. At its heart is a fragrant, slowly rendered scallion oil.

Spring onions are patiently fried in oil until golden and aromatic; tossed with soy and a little sugar, they yield a surprisingly deep flavour.

Ingredients

  • Wheat noodles300 g
  • Spring onions1 bunch
  • Vegetable oil4 tbsp
  • Soy sauce (light & dark)1 tbsp each
  • Sugar1 tsp
  • Dried shrimp (optional)1 tbsp

Preparation

  1. Cut the spring onions into long pieces.

  2. Fry slowly in oil over medium heat until golden and crisp.

  3. Add the soy sauces and sugar to the oil and bring to a brief boil.

  4. Cook the noodles al dente and drain.

  5. Toss with the scallion oil and serve.
