Scallion Pancake

Cong you bing – crisp flatbread from Taiwan

The scallion pancake (cong you bing) is a beloved street snack in Taiwan and China. Unlike a plain flatbread, it is made from layered dough.

The dough is rolled up with oil and spring onions and rolled out again, so frying creates many crisp, flaky layers.

Ingredients

  • Wheat flour300 g
  • Hot water180 ml
  • Spring onions, fine1 bunch
  • Sesame oil & oil2 tbsp each
  • Salt1 tsp
  • Soy sauce (dip)to serve

Preparation

  1. Knead flour with hot water into a smooth dough, rest it.

  2. Roll thin, brush with oil, salt and spring onions.

  3. Roll up, coil into a spiral and roll flat again.

  4. Fry in a little oil on both sides until golden and crisp.

  5. Cut into pieces, serve with soy sauce.
