Seekh Kebab

Grilled minced-meat skewers from the tandoor

Seekh kebabs are spiced minced-meat skewers rooted in the Mughal cuisine of South Asia. “Seekh” means the skewer the meat is shaped around.

Minced lamb is blended with onion, ginger and bold spices, pressed firmly around metal skewers and grilled over charcoal – juicy, spiced and smoky.

Ingredients

  • Minced lamb600 g
  • Onion, finely chopped1
  • Ginger-garlic paste2 tbsp
  • Green chilli & coriandersome of each
  • Garam masala & cumin1 tsp each
  • Chickpea flour (roasted)1 tbsp
  • Onion rings & lime (garnish)to serve

Preparation

  1. Knead minced lamb with onion, ginger-garlic and spices.

  2. Fold in roasted chickpea flour, chill.

  3. Press the mixture firmly around metal skewers.

  4. Cook over charcoal all round until browned.

  5. Serve with onion rings, coriander and lime.
