Sel Roti

Sweet Nepali rice doughnut

Sel roti is a ring-shaped sweet bread of rice flour, inseparable in Nepal from festivals like Tihar and Dashain. It is often made in large batches for guests.

The flowing batter is artfully poured into hot oil to form a crisp ring that stays soft inside – with a hint of cardamom and cinnamon.

Ingredients

  • Rice (soaked)300 g
  • Sugar100 g
  • Melted butter (ghee)2 tbsp
  • Banana (ripe)1
  • Cardamom & cinnamonsome of each
  • Milkas needed
  • Frying oilas needed

Preparation

  1. Blend the soaked rice with sugar, banana and spices until fine.

  2. Stir with milk into a thick, flowing batter.

  3. Let the batter rest for 1 hour.

  4. Pour in a circle into hot oil to form a ring.

  5. Fry golden brown, turn and drain.
