Shan noodles (shan khao swè) come from the Shan people of eastern Myanmar and are among the country's most loved noodle dishes – served as soup or “dry”.
Rice noodles are served with a savoury topping of marinated chicken or pork in tomato, with pickled vegetables, roasted peanuts and spring onion.

Thin rice noodles★300 g
Minced chicken★300 g
Tomatoes★3
Garlic & shallots★some of each
Soy sauce & paprika oil★2 tbsp each
Roasted peanuts3 tbsp
Pickled vegetables & spring onionto serve

Preparation

Fry the garlic and shallots in oil.

Add the minced chicken and fry until crumbly.

Add tomatoes and reduce with soy sauce into a thick sauce.

Cook the rice noodles and place in bowls.

Spoon over sauce, garnish with peanuts, pickles and spring onion.
