Shan Noodles

Burmese rice noodles of the Shan people

Shan noodles (shan khao swè) come from the Shan people of eastern Myanmar and are among the country's most loved noodle dishes – served as soup or “dry”.

Rice noodles are served with a savoury topping of marinated chicken or pork in tomato, with pickled vegetables, roasted peanuts and spring onion.

Ingredients

  • Thin rice noodles300 g
  • Minced chicken300 g
  • Tomatoes3
  • Garlic & shallotssome of each
  • Soy sauce & paprika oil2 tbsp each
  • Roasted peanuts3 tbsp
  • Pickled vegetables & spring onionto serve

Preparation

  1. Fry the garlic and shallots in oil.

  2. Add the minced chicken and fry until crumbly.

  3. Add tomatoes and reduce with soy sauce into a thick sauce.

  4. Cook the rice noodles and place in bowls.

  5. Spoon over sauce, garnish with peanuts, pickles and spring onion.
