Soto Ayam

Golden Indonesian chicken soup with turmeric

Soto ayam is one of Indonesia's many soto soups, found across the islands. Turmeric gives the broth its bright yellow colour.

Fragrant with lemongrass, galangal and kaffir lime, it is poured over glass noodles, egg and chicken – a warming comfort dish.

  • Chicken1 kg
  • Turmeric & galangal2 cm each
  • Lemongrass & kaffir lime leaves2 each
  • Shallot, garlic, gingeras paste
  • Glass noodles100 g
  • Eggs (hard-boiled)4
  • Bean sprouts & spring onion1 handful

Preparation

  1. Simmer the chicken with aromatics into a clear broth, shred the meat.

  2. Fry the spice paste until fragrant, add to the broth.

  3. Simmer with lemongrass and lime leaves.

  4. Soak the glass noodles, divide into bowls.

  5. Pour the broth over noodles, chicken, egg and sprouts.
