Soy Milk (Doujiang)

Homemade Chinese soy milk for breakfast

Freshly ground soy milk (doujiang) has been a Chinese breakfast drink for centuries and is often served with fried dough sticks (youtiao).

Ground from soaked soybeans, filtered and boiled, it tastes nutty and can be enjoyed sweet or savoury.

Ingredients

  • Dried soybeans150 g
  • Water1.5 l
  • Sugar or cane sugarto taste
  • Pinch of salt1 pinch

Preparation

  1. Soak the soybeans overnight in plenty of water.

  2. Blend finely with fresh water.

  3. Filter through a cloth, catching the soy milk.

  4. Bring to a boil while stirring and simmer gently 10 minutes.

  5. Season with sugar and a pinch of salt, serve hot.
