Steamed Spare Ribs in Black Bean

Cantonese dim sum classic

Steamed pork ribs with fermented black beans (pai gwat) are among the most loved savoury dim sum of Cantonese teahouses.

Bite-sized rib pieces are marinated with garlic, douchi and a little starch and gently steamed until tender and aromatic.

Ingredients

  • Pork ribs (in pieces)500 g
  • Fermented black beans (douchi)2 tbsp
  • Garlic3 cloves
  • Soy sauce & rice wine1 tbsp each
  • Sugar & starch1 tsp each
  • Chilli & spring onionsome

Preparation

  1. Marinate the ribs with soy sauce, rice wine, sugar and starch.

  2. Finely chop black beans and garlic and mix in.

  3. Let steep at least 30 minutes.

  4. Spread the ribs flat in a dish.

  5. Steam 20-25 minutes, serve with chilli and spring onion.
