Hot-and-sour sweet-potato noodles from Chongqing

Suan la fen - “sour and spicy noodles” - is a street classic of Chongqing and Sichuan: glassy sweet-potato noodles in a punchy broth.

Black rice vinegar brings the sourness, chilli oil and Sichuan pepper the tingling heat; toasted peanuts and soybeans add crunch.

Ingredients

  • Sweet-potato noodles (dried)200 g
  • Black rice vinegar3 tbsp
  • Chilli oil2 tbsp
  • Sichuan pepper1 tsp
  • Garlic & spring onionsome of each
  • Toasted peanuts & soybeans1 handful
  • Vegetable broth500 ml

Preparation

  1. Soak the sweet-potato noodles in hot water until glassy.

  2. Put vinegar, chilli oil, Sichuan pepper and garlic in the bowl.

  3. Pour over hot broth.

  4. Briefly cook the noodles and add.

  5. Scatter with peanuts, soybeans and spring onion.
