Fish-shaped waffle with red bean paste

Taiyaki are fish-shaped waffles baked at festivals and street stalls in Japan since the Meiji era. The shape mimics a sea bream (tai) - a symbol of good fortune.

The crisp, fluffy batter is classically filled with sweet adzuki bean paste (anko), and nowadays also with custard or chocolate.

Ingredients

  • Flour200 g
  • Baking powder1 tsp
  • Sugar60 g
  • Egg1
  • Milk250 ml
  • Sweet adzuki bean paste (anko)200 g

Preparation

  1. Mix flour, baking powder and sugar.

  2. Stir in egg and milk until the batter is smooth.

  3. Grease and heat the taiyaki iron.

  4. Fill with batter, add anko in the middle, cover with batter.

  5. Bake golden and crisp on both sides.
